thanks to everyone who voted for me, the competition is now over. My recipe came 6th! not bad, but not the top spot. be healthy, eat well and be good! produced and directed by jody lloyd DOP: devika bilimoria thanks to Cara Foot for the props! THE RECIPE ingredients: * 1 cup dates, pitted and chopped * ½ cup maple syrup * ½ tsp bicarbonate of soda * 2 grated apples * 2 grated carrots * 3 small ripe mashed bananas * 2 oranges - zest and juice * 1 cup sultanas * ½ cup chopped walnuts * 3 cups of spelt flour * 3 teaspoons of baking powder Directions: 1. Preheat the oven to 180C. 2. Put the dates, maple syrup and bicarbonate of soda in a saucepan over medium heat, stir until well combined; bring to the boil. 3. Remove from the heat and set aside to cool. 4. Transfer the date/maple mixture to a mixing bowl. 5. Add the apples, banana, carrots, sultanas, walnuts, orange zest and juice, mix well, and fold in the flour and baking powder. 6. Spoon the mixture into a pre-greased muffin tin. 7. Bake for 30-35 minutes, or until a skewer comes out clean from the centre of a muffin. makes 12 muffins. i halved the recipe in the video)
