My recipe came 6th! not bad, but not the top spot. be healthy, eat well and be good! produced and directed by jody lloyd DOP: devika bilimoria thanks to Cara Foot for the props! THE RECIPE ingredients: * 1 cup dates, pitted and chopped * ½ cup maple syrup * ½ tsp bicarbonate of soda * 2 grated apples * 2 grated carrots * 3 small ripe mashed bananas * 2 oranges - zest and juice * 1 cup sultanas * ½ cup chopped walnuts * 3 cups of spelt flour * 3 teaspoons of baking powder Directions: 1. Preheat the oven to 180C. 2. Put the dates, maple syrup and bicarbonate of soda in a saucepan over medium heat, stir until well combined; bring to the boil. 3. Remove from the heat and set aside to cool. 4. Transfer the date/maple mixture to a mixing bowl. 5. Add the apples, banana, carrots, sultanas, walnuts, orange zest and juice, mix well, and fold in the flour and baking powder. 6. Spoon the mixture into a pre-greased muffin tin. 7. Bake for 30-35 minutes, or until a skewer comes out clean from the centre of a muffin. makes 12 muffins. i halved the recipe in the video)
